Colin McArthur is not an outdoorsman, but he wants to climb a mountain. For Colin and his wife Dawn, this is the busiest time of their lives. Foil packet meals are one of the easiest ways to make dinner over a campfire and have been delighting hungry campers for years. Simply wrap a bunch of delicious ingredients in aluminum foil and toss it over the fire. Everything cooks together, so it’s all ready at the same time. But even great camping traditions like foil packets can use a little updating once in a while. So we made a few adjustments to the method for this salmon veggie meal.

Trying to cut down on your carbs, but still, want to feel full at the end of your meal? This steak fajita salad is the real deal.
We always struggle to get in enough greens throughout the day while camping, which is why we wanted to start experimenting with “entree” salads. Salads that aren’t just superfluous sides, but something hearty enough to call a meal.
Rhonda-Marie Avery, aka "Batgirl" was born with only 8% vision and is legally blind. She has no depth perception no cones in the back of our retinas meaning no daytime vision, no color vision. The technical term is Achromatopsia. But, her mother would tell you that she has been stubborn since the day she was born. "I think I was really angry when I was growing up that the world was so hard to navigate. Even to walk from the school to my brownie troop in the church down the road. There were roads to cross that I couldn't navigate. And I thought this is dumb. This is not education, this is this is a barrier. This needs to change." Since then Rhonda has run numerous ultra road and trail marathons, including a 314 mile run across the state of Tennessee. Watch her journey to break down the barriers she saw as a kid.

An expert kayaker gliding across a glassy bay can make things look effortless, but if you’ve been out for even a short paddle, you may have noticed muscles that weren’t ready for an extended voyage. If you have an upcoming tour or are taking up the sport in earnest, then it makes sense to spend some time tuning up your kayaking engine. The exercises Dr. Sam shows in this video increase strength, endurance and balance in the upper leg, hip, abdomen and back. Some of the exercises also mimic motions you use for certain kayak strokes.
