Coconut Curry Ramen

Creamy coconut milk, meaty shiitake mushrooms, and a medley of spices, this coconut curry ramen is a definite upgrade over the dollar store version.

Instant ramen is great, but as a main meal out on the trail we find it to lack substance. After only an hour or two, we’re hungry again. That’s why we came up with his redux version that incorporates more calories, more texture, and a whole lot more flavor.

Recipe:
Ingredients
• 2.5 lbs thinly-sliced meat (lean meat works best)
• 3 cloves garlic (minced)
• 1 jalapeño pepper
• ½ tbsp. onion powder
• ½ tbsp. black pepper
• ½ tbsp. liquid smoke
• 1 tbsp. red pepper flakes
• 1 tbsp. honey
• ½ cups water
• 1 cup soy sauce
• toothpicks

Directions
1. In a large bowl, combine garlic, jalapeño, onion powder, black pepper, liquid smoke, red pepper
flakes, honey, water, and soy sauce.
2. Add meat to marinade and refrigerate overnight.
3. Preheat oven to 175 degrees.
4. Line bottom shelf of oven with baking sheets and aluminium foil.
5. Place marinated meat in oven to dry for 2-4 hours. (Lay directly on oven shelf or hang from shelf using
toothpicks.)

Ayesha McGowan is a young Black woman from New Jersey who is determined to become the first female African-American pro road cyclist. She won her first state championship in her third race and quickly noticed that she was one of the very few females of African-American descent on the scene. In fact, she discovered that there had not been a single African-American pro road cyclist, ever. She has taken it upon herself to become the first.

Ayesha also runs the website A Quick Brown Fox (http://www.aquickbrownfox.com/), which seeks to not only document her journey but also to bring to light and celebrate other budding cyclists of color, creating representation in cycling that will encourage and inspire other African-American women and youth to follow their dreams—whatever they may be.

Coconut Chocolate Granola
Start your day with something sweet with this backpacking-friendly Coconut Chocolate Granola.

This vegetarian breakfast is loaded with nearly 500 calories per serving while remaining super lightweight. Half the calories come from easily-accessible carbohydrates while the other half come from slower burning fats & protein, providing blend of rapid energy for now and long burning fuel for later.

As far as DIY granolas go, this one is relatively simple to make at home. It uses pretty standard ingredients like rolled oats, coconut flakes, chopped nuts, cacao powder, maple syrup, and coconut oil. Once combined, place the spread on a baking sheet and bake for 20 minutes at 300F. Like with all DIY granola, there’s a very thin line between perfectly baked and overbaked, so be sure to set a timer!

Before you take this (or any meal really) into the backcountry, we definitely recommend making a small batch and testing it at home. You want to be confident you’re onboard with your meals before committing to them. Once you get the recipe dialed into your liking, then you can make a large batch to save for later.

If you enjoy your granola with a bit of milk, than a powdered milk is the way to go. When you portion out your granola into resealable containers or baggies, just add 1 tablespoon of powdered milk. Once out on the trail, just add water, shake, and voila: Granola with Milk!

Faster than instant oatmeal and loaded with more calories too, if you’re looking for a new backpacking breakfast to get your morning started, than this Coconut Chocolate Granola is for you!

Coconut Chocolate Granola
Makes 4 servings

1 cup rolled oats
1 cup coconut flakes
½ cup chopped nuts
¼ cup cacao powder
¼ cup maple syrup
3 tablespoons melted coconut oil
pinch of salt
4 tablespoons powdered whole milk
1 oz freeze dried raspberries (or other freeze dried fruit)

Preheat oven to 300F
In a large bowl, combine the oats, coconut flakes, nuts, cacao powder, maple syrup, and salt until everything is evenly coated.
Spread the mixture in an even layer on a baking sheet lined with parchment paper. Bake for 20 minutes. Remove & let cool.
Divide the granola between 4 zip top bags. Add 1 tablespoon powdered milk and ¼ oz freeze dried raspberries to each bag.
In camp, add ½ cup water (hot or cold) to the bag and mix. Enjoy!

A Steelhead Quest: Portrait of a Rivered Life

Terry Myers, a steelhead advocate and long-time angler, spent 2015 trying to catch a wild steelhead on a different river each month of the year. After successfully hooking a wild steelhead in all but two of the months, she set her sight on finding the last two fish to complete her quest.

The film explores the experience of an unassuming but determined woman on this two-year quest. Watch as she tries to unlock the mysteries of catching wild steelhead through the changing seasons. With her husband Jerry in tow, we see the challenges they face with depleting runs, while still enjoying every aspect of being on the river together—rain or shine, fish or no fish.

In this REI Expert Advice Video, Lauren Barnes, from the American Association of Snowboard Instructors, explains how to initiate and land leapers. My name is Lauren Barnes. I'm with the American Association of Snowboard Instructors. Leapers are a great tactic to use for soft snow, steeps and ungroomed soft terrain. The main focus of a leaper is to be changing edges off of the ground. So as I initiate my turn, I'm going to get nice and low and I'm going to flex my ankles, knees and hips. As I'm getting ready to change edges, I'm going to pop up and extend hard so my snowboard comes up off of the snow. That's when I'm going to change my edges. As my new edge comes in contact with the snow I'm going to flex down to make for a nice soft landing so my snowboard can ride out smoothly and I don't put too much impact on my body. I'm going to continue that flex down into the new turn so I'm ready to initiate the next one.
