Want to make camping meals that are easy and healthy? Use beans! Beans are the perfect base for easy, healthy, and delicious camping meals. The better you eat at camp the happier you feel, so eat your beans at every meal!

Breakfast: Chickpea Flour (Besan) Scramble - 1:12

1 cup chickpea flour
1 cup water
1 tbsp ground flax
½ tsp salt
1 tsp turmeric
½ tsp paprika
¼ cup nutritional yeast
½ onion
½ red bell pepper
½ avocado

Lunch: Sweet Potato and Black Bean Burgers - 4:38

½ can black beans
200 grams sweet potato (about half a large potato)
2 tbsp taco seasoning
2 tbsp nutritional yeast
1 cup spinach
½ avocado
2 tortillas

Dinner: Curried Lentils - 8:03

½ onion
1 cup brown or red lentils
1 tsp turmeric
½ tsp paprika
½ tsp ginger
3 cloves of garlic
1 large tomato
½ red bell pepper
1 cup spinach

Ethan Sheets, manages the REI Co-op in Cleveland, Ohio and feels most at home in the Midwest Woods with his son Finn. Born with a cerebral palsy, Finn is unable to walk, feed himself, or communicate with words. That hasn’t stopped this father and son duo from understanding each other through their outdoor adventures.

With some basic supplies and a lot of elbow grease, Graham turned an old swing set into a backyard climbing wall.

This is not an exhaustive how-to video; rather it outlines the creator's experience making his own at-home climbing wall. Before attempting something similar, make sure you evaluate your location carefully for strength and use a stud finder. Exercise caution and common sense when working with power tools and saws and be sure to wear appropriate eye and ear protection when necessary.

Coconut Curry Ramen

Creamy coconut milk, meaty shiitake mushrooms, and a medley of spices, this coconut curry ramen is a definite upgrade over the dollar store version.

Instant ramen is great, but as a main meal out on the trail we find it to lack substance. After only an hour or two, we’re hungry again. That’s why we came up with his redux version that incorporates more calories, more texture, and a whole lot more flavor.

Kathy Pico, an Ecuadorian native lost her leg to Cancer at age 38. Reassessing her life's value, Kathy turned to alpinism. On July 28th, 2017 Kathy attempted Cayambe, Ecuador's 3rd tallest volcano towering at 18,996 ft tall alongside Chad Jukes and The Range of Motion Project.
